Garlic Chicken Vermicelli

A yummy recipe for lunch time! I get tired with food easily especially if I eat them every week. So I invent recipes or customize them. It’s a good treat for those who scratch their heads every week trying to squeeze food ideas out of their brains. I am not a cook or even studied culinary, I cook based on experience. This recipe is very affordable and easy to cook.



So, here’s what you’ll need:
2 small packs of vermicelli (or 1 medium pack)
½ kilo chopped chicken
Chicken stock (chicken broth)
2 green bell peppers
Onions
4 cloves garlic
Small tomato
Thumb sized ginger
Garlic powder
Salt and pepper
Butter
Olive oil (optional)
Soy sauce (optional)

Here’s how it goes:
Okay, so first we need to marinate the chicken with salt, pepper and garlic powder for at least an hour. Soak the vermicelli in water then chop the onions, ginger (thin sliced strips), tomato, 1 bell pepper (diced) and garlic (minced). Crush the minced garlic.

Pre heat the pan then put the butter. Sauté the garlic until golden brown then mix the onions, ginger, tomatoes and the chopped bell pepper. Put the marinated chicken along with the sautéed ingredients after a few seconds. Mix chicken until brown. You can add a little bit of olive oil if you think that it’s a little dry to sauté. Add the chicken stock and a little bit of water, it’s up to your judgment. J

Put the drained vermicelli in the pan, let it simmer for a couple of minutes then add salt, pepper and garlic powder for taste. You may want it to be a little soupy just by adding water. You can also put some soy sauce for color and extra taste. Lastly, chop the other bell pepper into thicker cubes and mix it with your Garlic Chicken Vermicelli.
